As far as Disney packages, most of the "packages" are contingent upon you staying on Disney property. If you're interested in doing that, check out the plans that include the "Disney Dining" package. It gets you about $90 worth of food each day for about $50 per person per day.
If you're staying AT Disney World, check out Disney's Fort Wilderness Resort. Primarily a campground, it also has an area that is exclusively made up of "Wilderness Cabins." They are a Home-Away-From-Home resort (the highest tier on the Disney resort scale), but they are priced less than most of the Deluxe hotel rooms, and you get a bedroom, living room, bathroom and kitchen. When staying ON property, Fort Wilderness is always my first choice.

I would strongly suggest finding a nice house to rent near Lake Buena Vista (where Disney is located). For $900-$1000 (or more) you would have plenty of space and could save money on eating out by stocking the kitchen with basic supplies. Many rental homes have pools as well. However, you will need a car to get around.

Disney has an awsome campground with cabins and all near their florida theme park....my family and I went there when I was 10 and camped all week. It was a blast...my all time favorite vacation...I'll remember it forever!...And when my kids get a little older...we are going to do it! Good luck with this!
