You make it sound like a team of women scientists is in an underground lab inventing new emotions every week.

So you got a wiggler. Just remember: [a] she doesn't want a solution. She just wants understanding. But you can't say "I understand." That will p*ss her off. [b] The sex, while infrequent, is great. [c] if you really want, you can reduce a number of seemingly complex emotions down to just a handful of motivations: fear (that gives rise to insecurity, perfectionism, control freak, do these pants make my a*ss look fat, even " hold me"); love (even your sneeze is cute; making a house a nest; good sex); interest; disgust. There are a few others but those are a good start.

It's like asking why the sun shines on the Earth.

Seriously though... Everyone has emotions. Some people are better at hiding them... Or completely shutting them out. I had an ex who was like that... Shut out her emotions and left me feeling all cold and stuff.

Just accept that some people are more emotional than others. I find that preferable to someone who feels nothing at all.

To be self tortured. Men have them to, but they are taught from a young age that emotions are for girls or sissies. The weaker of the race.
