I believe it's because the word FRIED spooked the health concious

Actually, the state of Kentucky trademarked the name "Kentucky" so every time someone would use it in a name or title a royalty would have to be paid.
Not wanting to have to pay huge sums to the state the franchise became KFC. It also affected the Kentucky Derby, which, if you have noticed for the past few years has been promoted under the name "The Run For The Roses".
Anyway, after some fancy lawyer work, the Derby is now allowed to use "Kentucky" without a fee. I think KFC is now also allowed to use "Kentucky" without charge.

Well.. technically, it still is. KFC is a shortened version of Kentucky Fried Chicken. BUT - Like the first person said, Fried does not sound quite healthy. So they changed it to something not too different, and still sounds good.

cause Kentuckey is not the best state to be associated with according to a national fast food buyers awareness conglomerration poll.

7 out of 10 fast food eaters know someone in Kentuckey who is offensive and lewd. The Colonel was ashamed of this heritage and went for the KFC instead of promoting the offensive nature of the home state he once proudly flew his freak flag over.

It is truly a kinder andd gentler world now that the nasty head of Kentuckey is no longer raised into the public eye.
Please refrain from using Kentuckey in public conversation as well. We would like to forget that it exists and we can all sleep better at night without visions of Kentuckey picking boogers and farting in the general direstion of it's sister Missouri.

Because ALL of us are a little lazy and look for short cuts even in our speech and people just said KFC, so it started with the customer!

b/c someone bought the company and changed the way they made chicken. since they weren't making the chicken the same way kentucky fried chicken was, they were forced to change their name and they changed it to KFC

Also, they went international and KFC gets rid of those hard-to-read English words

because it's shorter and catchier than saying Kenntucky fried chicken. Also I think the whole word "fried" wasn't the best selling point:)

They didn't technically change their name they just advertise it that way.
That was what everyone was calling it anyway.
Their web site still shows the full name.
