In terms of value, it is probably the Morgan dollar. In terms of numbers of people who have collected them, it would easily be the Lincoln one cent piece, (penny). I am not being USA centric here. The coin craze caught on here more so than most countries, and we have been making Lincolns longer than almost any other coin in history, ( the Lincoln penny has the highest mintage of any coin in history). So, considering how many we made and for how long, and how cheap most are, it is not surprising that it is the most collected coin.
If you are talking about a single coin's value, the most expensive is the one 1933 US Double Eagle that was sold for $7.9 million a couple of years ago.

It is the cent, if you take the amount of people that collect the U.S. cent, as well as the Canadian cent, it beats out the others. Most children start out with this denomination. In the U.S., the state quarters are up there also.

My guess is the Lincoln penny, starting with the 1909 VDB through to the present year.

I'd say the penny, people hate to bother to spend them so they easily collect them. People end up with jugs of the things, because they're to lazy to count out change.
