I think scientists just look at our solar system and use it as a basis to estimate the probability of other solar systems having a planet that could sustain life. As someone said, water is a necessity so the planet can't be too hot nor too cold for liquid water. It's a matter of probabilities of finding acceptable conditions for life, not for finding life itself.
We find evidence that earth had life fairly soon after it cooled enough to sustain life. To some scientists, that is a single data point that indicates that life can spontaneously develop easily after the conditions are right. But under that scenario and with those probabilities, there ought to be millions of planets with intelligent life. The problem then is that we haven't been visited (at least openly) nor have we heard any signals (as in the movie Contact). So if they are out there, why no contact? Either they aren't out there or the distances make it almost impossible to see or receive signals. If they aren't out there, then earth is more unique then scientists thought.
I don't think Christianity would have any great problem with life on other planets.

There is a possibility that we may end up meeting with people who look alike to us some day later. The fact that a new planet that looks pretty much like our earth would strenghten this possibility.
The main sign scientists are looking for is the presence of water on these planets that they think is suitable to live on. Science studies and experiments even at junior high schools have shown to us that water is the very important substance to hold life to the extent that even microbes like unicellular organisms such as amoeba and paramecium only exist in water or damp area.
On believing that there is only one Earth, it all depends on how we except things to our views from what we have learnt in our religions. In the world of science though, it is common to challenge ideologies to look for new ones, even if it is against the teachings of a particular religion. (Eg : Nicolas Copernicus came up with the theory that planets revolved the Sun which was against the Roman Catholic teachings centuries ago as they believed then that the Sun was the one that was revolving us. He was eventually sentenced to death. However, later Galilleo Galillei proved that Copernicus was right after all.)
The same might happen to our case here now.

A few days ago they found a planet like ours that is about the same size same temperature and a pretty close atmoshpere. It's in another galaxy so we can't go there yet but there may be liquid water on it where life may exist.
