Technically, knitted counts as a kind of weaving. Non-wovens are fabrics that are formed by other processes, like fibers that are floated in water and then pulled up on screens to dry. Or The fibers are pressed and glued together, or they are poked with needles until they tangle and stick together. The last method is called felting.

Yes and no. A knit is a non-woven fabric, but not all non-woven fabrics are knit. It's easier to define what a woven fabric is. A woven fabric is when one has a warp and a weft separately. Hand and machine knits do not follow this criteria.

Woven Fabric will be best for boxer shorts as it is mainly used in making boxer shorts. WOVEN: A woven fabric has very little to no stretch. Work shirts, button up shirts, boxer shorts, jeans, and most bed sheets are made with woven fabrics. Often called Quilting Cottons in the fabric store. As related to cloth diapers, woven outers: Don’t stretch. This can be a good thing on small babies who will get a snugger, trimmer fit with woven outer diapers. It can be a not-so-good thing on big babies because the lack of stretch often leaves the third wing snap (i.e hip snap) exposed. Some children will be irritated by that exposed hip snap. Hold up better to wash wear. Woven fabrics generally don’t pill & tend to experience less fading (the exception to this is flannel. We don’t use flannels in our diapers). Don’t sag & fit trimmer. May shrink more than diapers made with knit outers.

Non-woven is more usually used to refer to felt or leather or plastic.
Beyond knits, things that get lumped on the woven side as opposed to non-woven also include crochet, netting, macramé, sprang and *paper*. :-)
