You take 1/2 of the coefficient of the x term, 16, and square it.
This will be: 1/2 of 16 = 8 and 8^2 = 64. Add this number.
So you will have x^2 + 16x + 64 which will factor as (x + 8)^2.

Do the same for the other problem. Take 1/2 of the coefficient of the x term, -6, and square it.
This will be: 1/2 of -6 = -3 and (-3)^2 = 9. Add this number.
So you will have x^2 - 6x + 9 which will factor as (x - 3)^2.

You complete the square by taking the x coefficient, dividing it in half, and squaring it.

x^2 + 16x

16/2 = 8
8^2 = 64

x^2 + 16x + 64

x^2 - 6x
-6/2 = -3
-3^2 = 9
