Baseball and Fantasy Baseball.
The entire field of mathematics devoted to working with baseball is called Saber mathematics. It can be used by the coaches in the actual game, but it is more often used by players of Fantasy Baseball. People pretend to be managers of a baseball club and get together with a lot of other people forming a league. They pretend to trade and hire actual baseball players and use their statistics to determine which Fantasy Baseball Player has the best team.
You can select your team at random or based on personal hunches, but the pros use saber mathematics to get the best team as possible. Since there is a charge to play in the league a pot is set up and it can be a pretty rich one with the winners getting the money. This makes the game of Fantasy Baseball more serious. There are different levels like there are with poker, just as there are different sized pots that people play for. When you get into the higher levels you need saber math to give you an edge.
I have heard of Fantasy Leagues with Football and I am sure there are some with Basketball or Soccer, that all use the same math, but Fantasy Baseball is the best known in the US.

well many sports use probability to estimate the chances of a ball going in a certain place. in baseball/softball, the person on the team who is the best catcher might be put in the place in the field where the ball is hit to the most. that used probability because if you put a good catcher in that spot, the probability of her catching a ball that goes out there is pretty good. also, in basketball, the shooter might pick a place to shoot where he/she makes it the most. same thing with soccer. you will try to shoot the ball where the goalie is most likely to miss it.

competitive sailing involves a lot of angles and bearings. can't think of any others off the top of my head.
