Also, the Universal Hall Pass cover of Ring Of Fire by Johnny Cash is amazing. UHP does a trip-hop version of it with a Middle-Eastern flare.

Although All Along The Watch Tower performed by Jimi Hendrix is probably better and more well known than Bob Dylan's original, I would go with Me and Bobby Mcgee performed by Janis Joplin and originally done by Kris Kristoferson.

I also like 10,000's cover of Because the Night better than Bruce Springsteen's version,Heart's version of Rock and Roll better than Led Zepplin and Heart's version of Unchained Melody over the Righteous Brothers.

Sorry, I know no-one else will have heard it, but the Crew Cuts, a Canadian group, did a fantastic version of "A Nightingale Sang in Berkeley Square" in the 1950s, which I love. The original song done by other singers was boring!
