A thimble measure in a pub is 175ml which can be a measure for wine but the term a thimble full means a small amount equivalent to what would fit in a thimble.

It would depend on what you like to drink, whisky or gin would be good, and thimble size would depend on how big your fingers are

No one does really. It's just a saying to imply you'll only drink a little, usually alcohol.
