Because wood gates are notorious for sagging and it is hard to make joints that don't - the whole gate being supported from one end. You really don't want a caster, you want a wheel that is mounted rigidly - perpendicular to the gate if swinging or parallel if sliding. If the ground is uneven, a spring loaded mechanism should be used. A caster pivoting every time the direction of the swing reverses puts more strain than not having one.
One alternative, if the gate spends most of its time either open or shut is to put a landing - a post, ramp or rail that the bottom of the gate rests on in the extreme positions and from which is it lifted slightly when changing position - this takes the strain off the gate structure, the hinges, and the posts.

If the gate is very wide, it is hard to make it rigid enough in both the vertical and horizontal directions to hold it up well without making it heavy and expensive, hence the wheel. If you do not want the wheel, adding diagonal bracing from the bottom hinge to the top of the swinging end may do the trick, it may not.

Probably to help support the weight of the gate as it's moving. Over time by not supporting the weight the wood used in the gate will warp and make moving the gate diffucult.

If you are planning to start on your woodworking project, this isn't something you should use, it's something that you would be insane not to. Go here https://tr.im/aAbq1
Truth is, I've been a carpenter for almost 36 years, and I haven't found anything like this for less than 10's of thousands of dollars.

Not a giant wooden rabbit, but a HUGE television set for us to open and climb in to. I don't believe it was" part of his plan" ( LOL) at all, just something that we humans constructed ourselves. Anyhow its working just like the Trojan horse, isn't it? Destroying more people every day and stealing our ability to reason for ourselves. Pretty poison.
