I started out paying $8-10 per hour (plus bonuses) but now I am having a hard time with people taking a lot longer than it should take them.
Most of the big name cleaning companies that I am competing with pay a %/by the job and I think that I want to start doing the same. I can't get a straight answer on how much they pay.
Any sugesstions?
I want to make sure that it is enough to keep good people, but not too much that I make enough to pay expenses and to make this business worthwhile

I would suggestions on what a good % would be on:
1) They do the house alone
2.) They do the house with one other person
3.) What the flat rate should be on a $75 job if they do it by themself and also if they do it with someone else
Should I do a flat rate or %?
Thanks for your help!!

Associations may be a good avenue to explore. These organizations will address many of the thoughts, questions and concerns you'll inevitably have as well as many you haven't anticipated yet. See the source box for some relevant links.

Hope that helps! I wish you much success & happiness in all your ventures!

Why don't you just put a time expectation on your workers? If they can't meet the expectation, they get reprimanded. If they can't adjust to your requirements to perform the job in a reasonable time frame, then it seems that they need to look for another job.
