It really has to do with the western and eastern traditions of the catholic church and the legalization of christianity (catholicism).Pope Gregory wanted to eradicate the (egyptian) jewish tradition from the Roman Catholic church just as Constantine wanted to call " byzantine music" his own, when in actuality both are derived from Egyptian Jewish tradition and pagan ritual before that. For purposes of unifying the Roman Catholic Church other regional chants were incorporated into Gregorian Chants or made obsolete.
The Cant of the Greek Orthodox Catholic Church still stands.
"From the very beginning, even during its Jewish phase i.e. Egyptian Judaism, monasticism cultivated choral singing as an integral part of its observance. A later historographer of the church, Eusebius, was aware of the musical predilections of the old ascetic sects in Judaism. In fact, he excerpted Philo's description of the ritual of the Alexandrian Therapeutes, which he likened to the Christian practices of his own time (4 centuries later):
"Byzantine" music is Greek in adaptation and the body of music that is historically associated with the Byzantine Empire, from its foundation by (Pope) Constantine I in AD 324 to the fall of Constantinople to the Turks in 1453.Transcripts of Byzantine chants date back to 8th Century A.D. (Incidentally, so do the derivative chants that became the Gregorian chants. Why? Because they were one and the same.)They Comprise the hymns of the Greek Orthodox Catholic Church. "It is undeniably of composite origin, drawing on the artistic and technical productions of the classical age, on Jewish music, and inspired by the monophonic vocal music that evolved in the early Christian cities of Alexandria, Antioch and Epheus." Byzantine chants"music" was derived from chants used by Egyptian Jews.
Gregorian chants also originated among Egyptian monks and were originally the practices of the Egyptian sectarian Jews. (Incidentally, the derivative chants that became the Gregorian chants are also traced back to 8th Century A.D. Why? Because they were one and the same.)"The one fact almost invariably known about Gregorian chant is that Pope Gregory championed them. In fact, a number of musical popes before him had contributed to the development of chant in Rome, forming chant schools, founding monasteries to preserve and maintain the chant or even composing chant. Pope St Gregory the Great (540-604), however, gathered together the different forms of chant; chose, adapted and ordered them; and had them transcribed into an Antiphonary, which in later centuries traveled long distances to bring Gregorian chant to other countries."

The details are sketchy in my mind, but in one of Alexander Dalrymple's books "From the Holy Mountain" he records, and provides slight evidence for, a story that Gregorian chant entered western Europe through a monk from Antioch, (or somewhere in Asia Minor), travelling to an Irish ?? monastery. There are apparently similarities between chanting traditions in both places.
The book is worth reading for many other reasons.

Good question.
I don't really know much about it, but I do know Byzantine music was more influence by Middle Eastern sources, including Jewish and Islamic forms of music.
