Because the ALP were uneducated and couldn't spell., actually, initially it was spelt labour.

While it is standard practice in Australian English to spell the word labour with a "u", the Party has spelled it without since Labor cabinet minister King O'Malley thought he would "modernise" the name in 1912, as per American English.

Perhaps the asker should have clarified herself, but I believe she means Labor as in the Australian Labor Party. It is spelled without the "u", but honestly I do not know why.
