When I was a child my garden spot about 3x7 not very big. It was enough to teach me a world of lessons though.
My mom had me plant 3 small rows of bunch beans, 2 cherry tomato plants,
1 hill of cucumber with stakes for climbing, 2 small rows of radishes, and the rest in zinnias..It taught me how and why food is raised. Taught me how to garden and most of all how to spend Good Time with my mom....
Whatever you decide to plant, the quality of your time together can never be replaced.

Have a veggie patch...let them plant some seeds and fruit and vegetables. It makes great education and also promotes healthy eating, if they think they made it themselves then they will more likely want to eat it. Cress plants are good, I remember making them in reception.
Sunflowers are lovely, pick those!
Have a little table and chairs, red, blue anything colourful.
Save a little bit of the garden for hopscotch or something fun like that.
You could have a little hen with chickens or a pond with fish or frogs. Or you could have some bunnies. Just make sure if you do that all the animals needs are met.

First you have not said how old these children are.
A simple edible ground cover would be clover, it is easy to keep cut.
Spinach and Sorrel are perpetual so that will cover the eat part of your request
Nasturtiums can also be looked upon as flowers and the are edible, the flowers leaf and seed can all be used in a salad.

You will want to have a mix of things like fast growing radishes, medium growing things like green beans and early tomatoes and some long term things like pumpkins or corn. You can do something interesting like planting what native American indians called the "three sisters," corn, beans and squash planted together in hills.
You are to be commended for encouraging your children to be involved with gardening.

I would try somethings like Chocolate mint or pineapple mint. taste great and fun to smell. Periwinkle's cause they bloom all summer. Shasta daises are pretty for a cut flower. Try planting a favorite vegetable like a cherry tomatoe plant. Also take your child to the nursery and let them pick out something they like. Plant are cheap and your memories will last forever. Just make it fun.

Dandelions maybe children like to blow them but bad for children who suffer from hayfever, daisies are quite cool too if you have a girl as children like to make daisy chains.
Sunflowers and roses are nice to put in a vase.
Veggie patches/grass are nice to cover the ground.
Maybe an apple tree, be nice to have a picnic in your garden, be nice for some shade in the hot summer and apple goes well if you put it in the oven with porkchops try it. :D

herbs veg an apple tree on m26 rootstock (will grow to only 6ft) strawberries peas a goose berry bush rhuburb im not really into flowers but if you must some flowers can be eaten too
