When the ice melts, the level is the same, because ice displaces water by weight. Other than land glaciers melting, much of whose water will go into groundwater, why is the ocean predicted to rise to such degrees with global warming?

a lot of the ice is on land not floating on the water. This will go directly into making the sea level rise.
The water in the ice caps are fresh water which is less dense than sea water because it does not contain dissolved salt.
When it melts it will have slightly more volume than what it displaces in sea water. This is only a little difference but with the Ice sheets several miles thick in places It will contribute a lot of water.
All the maps that we see in our books show Antarctica and the Arctic as small areas but in reality there are vast. The Antarctica is bigger than the USA or Europe and almost all of it covered in Ice.
that is a lot of water to add to our sea level.

Two reasons, apart from, as you say, the question of places such as the Greenland and Antarctic ice sheets suppying "uncompensated" water.
The first comes from the expansion of the existing ocean water proportional to the warming.
This is expected to provide the largest proportion of the effect.
The second is not so well known: *fresh* water-ice dissolving into *sea* water does produce an overall rise in level. (URL)

say you have a plate (ie the earth) and you have ice cream on top of loads of choco sauce on it, that the ice cream is float on, you weigh the plate and note the mass.
melt the ice cream, then weigh again - the same mass too. but wont you notice that there is more liquid?
on the earth you will have very diverse environment where water will just not go underground, it all depends on the permeability of the soil.
