it is the maximum displacement from rest position, ie if you draw a line going through the middle of the wave horizontally, it is the distance between that line and the crest or trough.

It is the maximum deviation from the median (or center line) of the wave. If you have an equation for the wave of the form
y = A*sin(f(x)) then the amplitude is the A value.
