Working on a fictional story and...

*The job must have been around at least two hundred years ago.
*It must be the sort of job one would expect a rural peasant to have.
*It must be impossible to perform without the proper use of both legs.

Any ideas?

Almost anything. Back in the day there weren't the little office jobs. Life was full of manual labor. And without legs.. you can't really get around to do manual labor.

Farmer would definately need both legs. Kind of obvious, but the only one I could think of.
