Normally a person's ear opens and points to the back of his/her head. I have a new baby. He likes to sleep on his ears while the ear wraps towards the face and covers the ear opening. I try to correct him while he's sleeping, but he rotates his head and wraps his ear again. It starts to be harder and harder to recover. Now even when he's not sleeping on his ears, his ears don't entirely open up.

What can I do? Is there a special "word" to describe this habbit that I can search the web or ask my doctor?

Babies don't have as much cartilage in their ears as we do, so their ears are soft and bend. It sounds as though he likes his ears 'tucked in', so I would put a hat on him when sleeps.
[with his ears positioned properly]. Try it!
When he is awake, gently massage his ears in the correct position - that's what we did in the long-term NICU.

Well I do not know the correct term for this, but alot of people have this issue with their baby's... I know I had the same issue when I was a baby, and my mom wrapded a gauze or ace bandage around my head when I'd sleep not to tight or anything but just enough to flaten my ear while i slept than once I woke, she'd take it off.. my ears are fine and i am still alive.. I also did this with my niece and nephew.. Just a suggestion, Not sure what else to offer...But I am sure if you explain it to the pediatrician he/she'll know just what you are talking about..I'm sure with this advanced world we live in..they make a pillow or something for it.
