The croutons are made from stale bread but they are then seasoned and toasted in oil that would go rancid if not sealed airtight.

The smell and the oil. You don't want that yummy crouton flavoring running away before you get them home and eat them. Besides, depending how they are packaged, the airtight package can act as a cushion to help protect them during shipping.

Why do they call money dough? It doesn't rise. To answer you're question.. Croutons are not stale there dried there's a difference....

I don't think they're stale, just that they're quick dried, and the airtight packages are used to keep them dry.

they arent stale bread. i used to work in a resteraunt where i hade to make them several times a week. they are just soaked in oild and toasted in a hot oven to make them crunchy like that. they can get stale (rock hard) and moldy if they arent stored properly.

They are toasted or baked they aren't necessarily "stale".
