Depends on how aerodynamic the car is, and what is the air temperature and pressure. However, its going to be less than 60 mph and turbulent.

That sounds like a great science project! Try to borrow, buy, or make something to measure wind speed that responds quickly to changes. You want to plot wind velocity as a function of time. You can estimate its duration by calculating how long it takes the car to pass you. Wind direction would be interesting too, but that's harder. Have fun!
