The Mosque where we will be conducting the service has requested this strange certificate.......

Yes in some countries for even the purpose of marriage Spinsterhood certificate is required. You can obtain such certificate from the local government authorities were you reside or belong to or if you are a foreigner in the country were it is required consult your Embassy to issue it to you, as your passport has your marital mentioned on the basis of this a certificate can be obtained from your Embassy.

In this country (UK) there is no such document that i know of. You can prove you are married or have been divorced but there is nothing to prove you are single. May i suggest you return to the officials exacting this strange request and explain that there is no such provision in this country. Maybe a statement from someone in an official position would be of help? you know like the kind of thing you have to produce when applying for your passport. Maybe the islamic official would be able to tell you where you can obtain such a ceritifcate- you can't be the only person to have entered into such a union. That is all i can suggest for you- i have looked on net for you but there doesn't seem to be anything that addresses this issue.

Ask the Mosque officials where to obtain it. Presumably they have experience of it. Or ask your own foreign office or embassy, if the marriage will be outside your own country, because they will probably have dealt with similar enquiries before. (But take care if you marry in his country - you could lose all sorts of rights you may take for granted. He could be allowed to take other wives. Make careful enquiries first.)

ask the mosque, if you have converting into islam then it must be that because usually u won't need anything else to prove to an iman, so take care and take faith in your allah!

Converting to Islam is difficult for some people. You should try to move to a more civilized country, because I can see the education is hurting you. Please move. Thanx for the points though.
