I was at a family restaurant tis evening and ordered a salmon steak (thinking it was a fillet) and found it was full of pin-bones. I had two mouthfulls and removed about 10 bones before I got fed up and asked the waitress to take it away. Is this something that a 'good' restaurant would do or would you expect it of any restaurant?

if they call it a fillet, there should be no bones. if it was called a salmon steak, there will be bones. it's all in how the fish is cut up.

Unfortunately with salmon "steaks" they don't usually remove them. It has to do with the cut of the fish. Steaks are made by cutting through the backbone of the Salmon, and so the bones are included.

On a Salmon fillet, yes they should always remove them.

Personally I'd much rather have a good Rex sole, or Flounder....or Green Ling... or... or... or... Yuuuuuuum!

Actually --nutritionally speaking-- the bones are recommended as a truly Excellent Source of calcium!

I don't quite understand though, because I notice that the bones in Canned salmon Are brittle enough to chew up. However, when I cook salmon, they never seem to become brittle, even though the flesh is done. I wonder if I'm doing something 'wrong'?

I would be mortified. I never ordered fish and got bones maybe one they may have missed but so many you couldn't eat it, that is unheard of. Wait until they get a lawsuit on someone that is sue happy and choked...no I'm with you hope you didn't have to pay usually a good manager would ask if you wanted something else, and it would be taken off the bill if you said No....nothing else...

I think all bones should be removed because it could hurt.

i think they should be removed 'coz it would be dangerous if they get choked in your throat
