Mucle cells are shaped kind of like bricks. This helps them expand and contract (when you move) yet also maintain a structure (strength). Epithelium cells do not have these properties because they don't perform the same function as regulare muscle cells.

Muscle cells get their strength by combining with other cells in long segments of overlapping tissue, the strength is required along the entire tissue, so they will be long and cylindrical (skeletal muscle). The function of epithelial cells is to provide a surface for absorption of nutrients, for protection of surfaces such as gut, cheek etc, so they will form flat, layered mesh-like networks. They do not require anywhere near the physical strength of muscle tissue.
