the machine that drops the dough in the fryer creates the hole in the donut. On rolled out raised donuts the roller that cuts them has a hole in it. This makes it easier to fry and turn them and they also fry more evenly. Donut holes are a bugger to fry as they continuously roll and dony fry as even unless held under the oil.

They have holes so they can be pulled out of the fryer easily. I learned that on that food networw show Unwrapped.

They were originally made for sailors so they could stick them on the wheel thing if they had to steer it. At least that was what I saw on tv.
