I'm writing a short story about a hoax, and I need the police in the story to be put off the track for awhile by making fake blood taste like real blood. Real blood has a unique metallic taste. (You know how a cop sometimes dips a finger into a pool of what looks like blood to taste it?)

your fake blood should not only taste like real blood but also have colour like blood . Therefore, concentrated solution of ferric chloride will look like blood and is non poisous to taste..
Hence, ferric chloride solution can be used.

Why not have your villain use pig's blood. If this person is able to go out of the way to mix up a fake blood concoction, it might be easier for him to obtain pig or cow's blood.

I don't know a single cop that would taste from an unknown pool of blood. Cops nowadays will carry latex gloves to avoid contact with body fluids.

I hope your story takes place in a pre-AIDS awareness era. I doubt that any cop or investigator today would do a taste test on a blood sample to quickly judge in the field whether a substance is blood due to concerns about disease.

mildly basic sodium hydroxide solutions have a metallic taste which reminds one of blood.

I would use copper and a trace of salt.
