It's questionable if they would survive or not.
First they are usually pond bred hybrid that are bred for warmer waters.
Second, they can and will move all up and down the stream, it's doubtful you would ever see any of them again.
Third, as another poster mentioned raccoons would love them. So would opossum and many types of birds.
Fourth, you would be contaminating the stream with a foreign species which is a bad idea.
I really hope you change your mind and don't add the crayfish to the stream.

It probably isn't a good idea. The crayfish you find in pet stores aren't the same kinds that are from around where you live. Many areas have laws against introducing non-native species into the wild because they may kill native ones, or they might be carrying diseases or parasites to which the natives don't have any natural immunity. Plus the crayfish you buy might not be able to survive in the water temperature or water chemistry of an area other than that from which they came.
If I remember correctly, you asked a question yesterday about not being able to find any crayfish or minnows in the stream. If the native kinds to your area aren't able to live in the stream, it's even more unlikely that ones you bought would be able to live there.

Crayfish that you buy in a pet store are usually bred in captivity and are not immune to a lot of the diseases and like their wild counterparts. They are also very picky about water quality. You can't guarantee that chemicals or other harmful substances will not enter the stream outside your property, nor can you guarantee that the crayfish will stay in your part of the stream.
Its best to just leave the stream alone and enjoy it the way it is.

Crayfish would probably do good, since they need moving water. I don't know where you live but we go down to the local swimming hole in the summer and catch crawdads as we call them and I have kept them in my fish pond as long as I have the fountain running to move the water around.

They would no doubt survive,but would they hang around? Who knows? If your stream is visited by Racoons,the crayfish would be much appeciated by them.

Also, make sure that the water isn't too acidic. That could possibly kill them.
