I think your question was asking for fish, rather than food for fish. PeeTee and Bubbles gave you a few from the cichlid and catfish families. There are also other tropicals that need a major portion of their diet to be plant based.
Silver dollars are herbivores; mollies, guppies are omnivores that can do well on a plant-based diet
for coldwater, goldfish
most of the strict vegetarian fish are marines - especially fish from the tang/surgeonfish family and some of the blennies
You can also keep snails and freshwater shrimp that are algae eaters

Vegetarians do not eat fish but their are all types of vegetarians so maybe search the different types of vegetarians and place yourself in that categorie vegetarians don't eat mean fish poultry or flesh however they do eat dairy products and eggs

There are many foods available for vegetarian fish. You can find them in any form as well. Some dry foods include spirulina flakes, algae wafers, HBH Graze (hard to find), Hikari Cichlid Excel and Cichlid Complete, and my favorite, Dainichi Veggie Deluxe . Also you can buy a soft leaved live plant to keep as a dietary supplement. Also, some frozen veggie foods are available. San Francisco Bay has one called Emerald Entree which is almost all veggie. I've had a few of my own vegetarian fish. I still have a school of 17 Tropheus Brichardi in a 200 gallon tank. They are all fed mostly vegetable matter. The Malawi Rock Fish(Mbuna) all require a diet almost totally of plant material. In fact, if they get too much meat in their diet they have their own special disease that they get called "Malawi Bloat". Basically they just swell up and die. Hakari makes a special food just for these vegetarians. Most of the Loricaridae(Sucker-mouth Catfishes) are vegetarian(although not too strict,they'll munch on dead tankmates). The Black Belt Cichlid is at least partially vegetarian. Pacus are seed eaters,although they get too big for most aquariums (including public ones.) There are lots more,but that's all that come to mind right now. I've kept all of these species except the Pacu,and I've eaten them,they're delicious.

You can feed fish dried or boiled lettuce. I had a fish and we fed it that and it lives for about 3 years. This was a Beta fish. Beautiful fishlives long good choice!!!!

There are many fish that are or do eat veggies. Goldfish for one have mostly a veggie diet. i.e. lettuce, spinach, pumpkin, cukes, beans, peas, etc.
Of course all fish will eat certain bugs, worms etc.
