Does anyone know a knot that is fairly easy to tie and is unlikely to come undone. Must be able to tie two poles/sticks togeather.

Scouting has done this for some years, they call it lashing:

There are other knots too:
The scaffold knot:

(use the 2 poles instead on one plank, not as secure as the lashings.)
The transom knot:

(a little down on the page) not easy to get undone.

Do not rely on a reefknot or square knot if there is any change that someone gets hurt or something gets broken when the knot fails.

a sheep shank not is probably best.
