It depends.
If the undead are corporeal and fleshy, such as zombies or ghouls, a dish of tripe or head cheese is most appropriate. You can usually get away with serving an inexpensive burgundy or even beer as an accompaniment.
If you're serving corporeal and non-fleshy undead (skeletons), serve the same menu you would serve if supermodels were in attendance. Think fish, steamed veggies, and a dry chardonnay.
Incorporeal undead are another matter entirely. Your ghosts, or--my favorite--wraiths, should definitely go with the lamb, or perhaps a fine cut of rib-eye; but either way, they should definitely be served a big, bold red such as a Cabernet Sauvignon or a highly tannic Syrah or Shiraz. Those wraiths do like their reds!

since you just listed the undead, i'm assuming you'll have vampires IN ADDITION to zombies. well since bloodsuckers will be in attendence, i would go with the lamb, being virgin flesh and younger (i.e. better) sources of blood.
however be sure you have enough for everyone, zombies are notoriously gluttonous and will become rude and unsurly (not to mention begin forcibly opening the skulls of your other guests and feasting on their juicy juicy brains) if not fully served.
also be sure to have a good red wine.
Wine Spectator recommends Cabernet with lamb.

I believe there is nuthin like mutton!!!! Since the undead have no taste buds mutton is cheaper and easier to prepare.

Actually, you should serve a variety of seafood because the undead are likely to be pirates and they like that sort of thing...
Don't forget the blood wine, that's a classic.....
