Snakes don't always want to be held, simple as that.

Did she shed the scales over her eyes? Sometimes snakes have what we call a bad shed (not one complete piece, but several pieces and sometimes all the old skin doesn't come off). It leaves foggy scales over the eyes and, if they build up, it can impair their vision. There are creams you can buy to help this.
Another thought is: How are you approaching her? Most snakes hate it when you pick them up from directly above them (it reminds them of birds of prey I guess), but if you come from the side they're fine with it.

After they eat it be best to wait about 4 days before picking them up. Did all her old skin come off? What we do with ours is fill the tub with warm water about 2 inches and put the corns in there they love it. I let them ( one at a time) stay in for 10 minutes to 30 minutes until they start to go over the top of the tub this helps them to get any tiny pieces of skin on them off.

She may be a little sensitive still after shedding. The bigger they get the more skin they shed and it could have irritated her a little more than usual. Give a few days and be gentle.

She may also be having trouble digesting right now. I know I wouldn't want anyone to pick me up if I had gas.
