When putting lesson plans together, wuld it be better for the student to write a paper, or do multiple choice or fill in the blank? What helps the student retain more?

Any of those techniques are useful when assessing their knowledge. However, when getting them to retain information, it is important that they have an opportunity to share with each other, use unique ways to express their ideas, and use memory techniques. So try to find ways to make learning meaningful for them, encourage interaction, provide feedback that makes them think, and provide support through the learning process. Do not always give the answers or point them directly to the answers. Ask questions that encourage them to find the answers for themselves. This means that you have to know what their interests are and what things are troubling or moving them. It is easy to find memory techniques. But you have to ask yourself, do you want them to just memorize things or be able to use what you are teaching them? Both can be accomplished by carefully considering your learners and who you want them to be by the time they have completed your learning experience.

Why don't you try a combination of the three? Maybe have a few essay-type questions but mostly fill-in-the-blank and multiple choice? Not sure if you're talking college freshman or high school freshman - if high school, keep in mind that many high school freshmen aren't very skilled at writing, spelling, etc. The only emotion that a person cannot learn while having is embarrassment. Fill in the blanks and writing a paper is always the best way to help retain more information. It requires a little more study and effort and a little more in the way of using differetn learning styles and techniques.
Multiple choice is always the easiest way to go and does not encourage in depth study habits.

As a teacher, I have found that students have a variety of learning styles. When teaching and asking questions, you can discover these which can help you when you create tests. Another point is, what will be the easiest for you to grade and what is the best way you will determine that your students have accomplished the goals and objectives you have set. I like to read short essays and I also like for students to understand characters and their relationships. When students can express their thoughts and opinions on a subject matter; compare and contrast is also a good way to determine knowledge. I hope this helps.
