Sodium polyacrylate is the most (water) absorbent chemical that I can think of -- it's used in diapers and such. It's fun to play with and you can buy it online (http://www.stevespanglerscience.com/product/1278).

A chamois is an animal that looks like a cross between a small deer and a goat. Its skin (chamois leather) is very absorbent.

On an industrial scale, it may be easiest to condense vapor on a cold surface in order to remove it as liquid. Or, one could simply pump the liquid.

There are many hygroscopic materials which absorb water and moisture from air. And silica gel is one of the commonly used materials in descicators. Refrigeration is another method of removing excess moisture from air without heating.
