Outback steakhouse is casual however, this is a special occasion. I would dress a step up from what you normally dress but don't over do it where everyone feels uncomfortable. No gym shoes of course. Ask your boyfriend what he would like to see you in. I would say a nice pair of newer jeans are ok. Pretend you are going to Church but a bit sexier.

Elegantly casual
A bright dress that shows modest cleavage and is about 2" below the knee, lond enough so nothing shows getting out the car but still shows a little leg. A floral pattern would be good for outback, or an assortment of swirls. No solids, no stripes or checks. if the piece has a belt that would be better. Cover any risqué tattoos, but general ones are fine to show off.
For jewelry wear a simple necklace that does not hang down to your cleavage, you don't want to draw the folk's attention to your breasts. Avoid chokers though. Silver or gold, the metal does not matter, but make sure the pendant itself is simple. If you wear a watch that is enough. If not then one or two bracelets on both hands is fine. No rings or pins unless they are a class or company thing, or another sort of conversation piece. An anklet is fine too. Earrings at your own discretion, but keep them to below palm size.
Wear your hair down, with a little bounce, almost as though you just combed it. Don't wear anything in your hair, and don't do any kind of fancy do.
Heels are fine, but not the overly pointy tipped shoes. Nothing rounded like a school marm either.
There are reasons for all the things I suggested, but I won't go into that now. The recommendations above are based on a generic mold and would vary according to the parents themselves, and the son. Without knowing more I can't give you any better help.
But then I am a guy. What do I know?

Wear a nice top that isn't cut to low. Maybe a nice tank with a cammie over it. And a great pair a Jeans with a Hot pair of Flats or Small Heel. You don't want him having to look up to you. I mean you might even want to go more casual because it just him and his family you do not want to be the most dressed to impressed person in the group. Maybe just double layer a few shirts (polo or tees) And wear a super cute pair of jeans and a Pair of Flats or flip flops. You have already impressed him just don't try to dress like someone your not ,it will make him feel out of place. Good Luck

Don's worry about the guy. It's his mother you have to impress. So make it something smart, simple and sweet.
