Edge over Jarrett. Edge has more height and reach over Double J. I couldn't see 5'11 Jeff hitting the Stroke on the 6'4 Copeland, and it's pretty unethical to use a guitar during a match when it's not sanctioned to use when you're a face. Edge would turn Slap Nuts inside out with a wicked spear.
MVP over D'lo. D'lo would dominate a majority of the match though. I could see him carrying Porter through that match. It's not that Montel's untalented, he's just unremarkable.
Sting over Undertaker. For backstage political/religion reasons, Borden would win
I'm sure Levesq and Hall have went toe-to-toe in the past, but Triple H. Poor Scotty, could've accomplished so much if he had stayed off the sauce.
Booker over Ron, no contest really. It'd be a terrible match too since neither's capable of carrying a match at this point in their careers. Booker's just too old to pull Ron through, and Ron's just too set on using five moves to be diverse enough to keep the crowd interested.
Depending on when the match would take place, I could see this going either way. I'll go Orton over Lesnar though. Orton has an easier finisher to pull out of nowhere, I could see him reversing out of an F-5 mid-air spin and hitting the RKO.
Kevin Nash over Cena. Nash isn't really capable of wrestling right now, so I could see this match resulting in a devistating 6 minute squash over Cena. Why? Because Big Kev always holds the books ;-)
Some inventive dream matches there. Kudos.

Edge- Edge was trained by the Harts, and I don't like JJ
MVP- D'Lo is kind of old, isn't he
Sting- close call, but Stinger has experience in Japan
HHH- Scott Hall's a drunk
Booker T- Book's got more experience and technical skills
Lesnar- as much as I like RKO, Lesnar is a much better grappler and he's super strong
