I did a google image search on someone and it returned some photos from that person's website. I then clicked on the photo to enlarge it. Will this count as a "hit" on that person's site? Will they in any way know? Any help is appreciated! PS- no, I'm not stalking anyone, just working on a project. :)

Yes, they can know... IF they keep stats on the images as well as the individual pages, AND they bother to analyze the individual hits.

Basically, if the image gets hit w/o a matching hit of the page, then someone has linked to the image directly, such as what you did... click through via Google image search.

However, most sites don't track individual images and pages that closely.

Yes they will definetely know your IP address. That will not really make a big difference if the website gets a lot of traffic they will not even notice you.

Even if they did, they wont know its you. They will have to go back to your ISP and find out that IP was assigned to you. Unless you do anything criminal the chances of that happenning is nil.
