Grafton is 600km straight up the highway and will take you six hours of driving plus fuel/food stops. It is a good road and a divided road for more than two thirds of it. If you are looking for places to stay in Grafton, there are some excellent pubs. I haven't stayed in Grafton as I only live 140km away but I have had lunch many times at the pub on the river.

To give you an idea the Premier Bus take around 9 - 10 hours, depending on whether one or two 30 minute meal breaks.
RE staying at pubs, depends on where you are want to stay - Grafton, Sydney or points in between.
While pubs are fine if you plan spending a lot of time at the bar, when not and considering cost elsewhere may be cheaper.

At least a week, more if possible. If you are coming in the Australian Summer there is plenty to do! Lots of beaches - Bondi and Manly are most famous, however the other northern beaches are beautiful too Plenty of bars/pubs/clubs Good eating and shopping areas Taronga Zoo is a highlight as you can see the harbour, its bridge and the opera house from there. The rocks in the city of Sydney is a popular area with tourists and a good night spot If you are planning a longer trip maybe head to the blue mountains or central coast for a few days, or if you are looking for a different city to visit after Sydney Melbourne is nice but very different to sydney. It doesnt have many nice beaches, however some consider it the food and fashion capital of Australia Hope this helps!

Ooh, six or even seven hours is very optimistic. It took me almost nine (with two rest stops) to get as far as Coffs. The Pacific Highway is a vile death trap (single track a lot of the way with occasional overtaking lanes) and the semis and B-doubles are out to kill you. I'd allow nine, definitely. Sorry, can't help with pubs though.
