Horseshoe crabs possess the rare ability to regrow lost limbs, in a manner similar to sea stars, - but not eyes - so that can't be it....
So all I can think of is a Lobster... So possibly a Norway Lobster??

a potato, unless you consider the photo sensitive organs on a flatworm eyes.... they do a lot of regenerating
