I don't think those that do celebrate Hanukkah wouldn't celebrate it any different than the Jewish people over here.

They do what the jews here do, and maybe some families do it differently just like some families celebrate things differently anywhere.
they do not get a day off for it though, as all religious holidays that are off in France are catholic (so they get Christmas, easter, passover, Virgin Mary etc)
