There is nothing much to do around Athens airport. If you have time, take the metro out of there and go to Syntagma, which is right in the centre of Athens, and take a walk in Plaka, the old centre of Athens, under the Acropolis. If you really hurry you could also visit the Acropolis. But make sure you know exactly what time you must be back at the airport and also make sure you check at what time the metro leaves from Syntagma to the airport (it's every half hour), so that you don't miss your flight. Ask if you need to be early for the check in etc.

If you are in for some running you can take the bus or metro and go to Syntagma sqare. From there it is short walking distance to Akropolis and Plaka. About 45 minutes to go and another 45 to go back and you need to be at the airport 2 hours before the flight. Possible but take care.
If you decide to stay around the airport, there is not much around. There is an Ikea store (not much fun). Watch the planes or get a good book. The airport cafes are a little expensive.

Unfortunately there is not much to do around the airport - actually, nothing. You should go downtown, which by train takes 40 minutes. I do not know at what time they leave from the airport, but from Syntagma square downtown trains run to the airport every 20 minutes, 10 to the hour and 20 after the hour. Yes, you could make it to Acropolis (the site closes around 7) and in any case you can walk around Plaka (the old centre) and Syntagma (shopping area).

allow plenty of time to go back thru security if you are taking an international flight though......last Aug coming back to the states it took me exactly 3 hrs to get thru it from point beginning to the door at the gate. But then that was not long after the London arrest so was high security then, just check before you leave the airport. With 6 hrs you should have enough time to do a little downtown walking about.
Athens has a nice airport.

That will be difficult. Just got back from Greece this week and it took us 40 minutes by bus to get from the airport to the lively part of Athens. If you're willing to make that drive, go see the Acropolis.
