I cut the flower stem off when the flowers are wilting and it is no longer a showy array! And that stalk is a good hardy spike that I save for propping up other plants, like a bamboo stake would be! Arent they just a joy to have?

Cut the flowers and use them to make a salad, good stuff as a substitute for lettuce. Then cut the stalk. Do this before they become bug infested.
