Acetic acid, CH3COOH only has one H+ to release. The other H's are connected to the methane group CH3. COOH is the organic acid group, and the H+ comes off that as shown in the way you have the formula written.

Because the three hydrogens bonded to the carbon atom in the methyl group are covalently bonded, not ionically bonded, and therefore they will not dissociate in water.
The lone hydrogen on the carboxyl group, however, is more polar, and thus is easily dissociated in aqueous solution.
