I don't know where you are travelling from to get to Nijmegen, but you needn't go anywhere over the weekend, as there is plenty to do there. It is the oldest city in the Netherlands, with a history (and a fort) going back to Roman times. There are loads of cafes (pubs) and restaurants, including at least two Irish pubs. An interesting point is that there is more (outside) terrace seating at cafes per population in Nijmegen than any other Dutch city (Yes! including Amsterdam). If the weather is fine go down to the waterside (Waalkade), sit at one of the many terraces and watch the large barges and even small seagoing ships passing by on what is the busiest stretch of waterway in Europe. Everything en route to Rotterdam from as far away as Switzerland passes that point.
Windmills you can see everywhere, at least two are still operating within the city boundaries, milling corn (on sale). Best one probably St.Anna.
Cows you can't miss wherever you travel.
'Ladies', for want of a better phrase, can be viewed by walking towards the railway bridge you can see in the opposite direction to the road bridge(this is from the Waalkade), following the road by the river round to the left, then at the junction turn left and past the Chinese Restaurant on the left. The 'Ladies' will come into view on the left ahead of you They all have U.V. lighting in the windows. To return to the City Centre keep walking straight ahead (Lang Hazelstraat)2-300 metres and you are there. No worries about walking around, normally quite safe.
Any information you may want about Museums Zoos etc. you will be able to get from the tourist information office (V.V.V.)
As for shopping I'm sure Nijmegen will keep you interested for at least 4 or 5 days if not more, and there is a large market on Mondays and Saturdays.
Arnhem is only 16km. away.
There several Canadian and British War Cemetaries nearby(beautifully maintained)
Another interesting fact :- If you have seen the film 'A Bridge Too Far' the bridge was the one at Nijmegen

P.P.S. Of course you are right Henja, the bridge was the bridge at Arnhem(Operation Market Garden), and what I should have said was, that in the film it was Nijmegen bridge that was used to portray the bridge at Arnhem.

You can go to those zoos, specially when you go to the "Burgers zoo" in Arnhem, very nearby is the "Openlucht museum", where you can see many old dutch farms and some mills, you can even climb in the mills. The Openluchtmuseum is really interesting. If you wanna see some more mills between the dutch meadows, you might make a drive in the Liemers, the part of Gelderland between Nijmegen, Arnhem and Zevenaar. There are mills in Zevenaar(Buitenmolen) ,Didam/Loil (De Korenbloem)(Martinus), Nieuw-Wehl and in Zeddam. But take along a good map, otherwise you will lose your way.
For shopping you'll be fine in Nijmegen or Arnhem.
The distances are short, but the roads can be busy.

Don't go to the Museumparc Orientalis, I've been there ones and it isn't much...

A lot off windmills in Nijmegen and surroundings, also a lot off cows everywhere in Holland...
Just ask the locals, they will help you out...

bypass to the river fringe of nijmegen , this is totally incredible. interior the neighboorhood , at arnhem, at approximately 20 minutes from nijmegen there is the Openluchtmuseum it is an outdoors museum the place you could locate the history of the netherlands as alive as this is! suitable nextdoor to this museum there is the burgers zoo&safari, it is extremely no longer undesirable for a zoo, they have a tropical and a desolate tract hall, with loose animals and so forth...
