Gift cards are nice but they limit the possibilities sometimes. Take up a collection and give her a check ! She will certainly use it for anything that she will possibly need for her first year of teaching. If she will be teaching kindergarten there are so many supplies she should get. If you give her a gift card it will restrict her as to where she must shop. Cash will enable her to go to a variety of stores--books, stationery/office stuff, rubber stamps, stickers, markers, comfortable shoes, stockings, attache case, playground stuff like jump ropes and balls, board games and so on. You can get her a large mug or lunch tote with a card and put the check in that.

Either a nice attache case or a gift card to a place like office depot. You'll be surprised at how much office supplies a teacher needs...and how often to the school office runs out. Some office suppliy stores also sell rolling carts that she could put all of her teacher manuals and things in.

Gift cards are great, but if you want to give her something a little more personal, how about a name plate?
"Mrs. Smith" on a name plate for her desk with a teacher theme - apple, ruler, chalkboard.
Maybe a personalized photo album that she can stick pictures in at the end of the year. "Mrs. Smith's Kindergarten Class," again with a teacher theme.
