I marinate for roughly 5 hours and the best sauce in my opinion is minced garlic, grated fresh ginger, a little finely chopped red pepper and soy sauce. The amount you use will depend on your taste. I bake the tofu and baste with the marinade every half hour for about 3 hours in a warm, not too hot oven.

Not long for me.
15 minutes to a half hour would get my meat nice and tender.

Just don't cut it into bite-sized pieces or stick a fork in it. Keep it away from tenderizer machines too. Just keep it warm and moist and it should make its own marinate shortly. Thanks for your support.
