How and why does it turn black? Is it like a symbol or metaphor? I just want to know before I see the movie so I understand it more.

John Jameson (that guy who almost married MJ in the second movie) brought this alien symbiote back to earth on one of his space excursions. (he's an astronaut) It fuses together with Spiderman's suit and he is influenced by it's evil nature. After it causes complications in his relationship with MJ though he tears the suit from his body therefore reverting to his normal Spidey self. The symbiote later finds a host in Eddie Brock.
On a side note: If you check back on the second movie(maybe the first one?), Jonah Jameson, the publisher of the Daily Bugle, remarks on the shoddy camera work of some photographer named Eddie which turns out to be Eddie Brock. He also says "Would it kill you to get a decent suit?"

One of Spiderman's enemies in the comic book was Venom, who looks like will be played by Topher Grace. The alien that turns Topher's character into Venom attacks Spiderman first, and he becomes intoxicated with the power. His suit turns black because the alien itself is black. I won't give away too much more because I don't want to spoil the story!

The Symbiote covers his body - since it is black it makes his suit look black. It later calls itself Venom when it attaches to Eddie Brock and even later than that becomes a good guy.

As in the comic book spidey comes in contact with an alien life form=symbiote which feeds on his vengeful feelings. He fights between good and evil within himself in which good prevails and he is able to seperate himself from the symbiote which finds it way to eddie brock and it becomes one with him and feeds off his hatred hence venom is born.

the reason why his suit is black is because its a alien symbiote. so the suit is not cloth, its a living alien, and it forms over peters body, whenever peter, needs to change.
