It depends on the herbivore. Seeds and nuts have plenty of fats and proteins.
Grass-eating herbivores have a harder time.They are largely dependent upon microorganisms that grow in their digestive systems to break down cellulose into simpler carbohydrates, which then can be converted into protein and fat.
Cattle have the most elaborate and efficient system with their 4 stomachs and colonies of microorganisms that live in them. Much of a cow's nutrition comes from digesting the microorganisms which have fed on the grass the cow ate.
This system produces a lot of flatulence, which is normal in cattle; in some small villages, cow pies have been collected and used to produce methane for energy to generate electricity.
