Odd, to say the least! The state I live in is part of a reintroduction program and I got to see the first group of fry to be released. The fry, by the way, were about 12"-16" long! Adults range from 4-6 feet, with most being 4-5.

They do look mean, but they are filter feeders, so they aren't interested in anything bigger than plankton.

Paddlefish is only one of several fish that produce caviar - sturgeon, whitefish, and salmon are some other sources.

no caviar that people eat come from sturgeon but let me tell you paddle fish (spoonbill) are delicious
