Runs through the gears great, low end, top end ( until 70-75 mph). Get on the throttle and it acts like it starves, get back to 70 mph range and runs fine, no power after that. Sync'd carbs, cleaned carbs, jets and set valve clearance. Rebuilt carbs and and all pull even.

Maybe fuel & air adjustment? Maybe old age?
Any performance tips or pointers?

it sounds like you need to have your carbes jetted but it could be the air filter ,or spark plugs or coil braking down at high rpms.i would start with the air filter and go from there

Check the float level. It could be starving for fuel at top speeds.
It couldn't hurt to check the points and timing. Make sure the timing advancer turns freely.

Could be that it just wasn't designed to go any faster than that. I had a Yamaha 500 that would top out at 76 mph and that was it.

That would suck– my tendons would rip from the sheer force of running that fast. Having a super power for nothing. Any human body is too fragile for all that speed.
