Studio headphones have better frueqency response most of the time. You'll have to compare the spec's. They are also better for monitoring mixdown/playback in the studio, and for recording. They are better isolated for sound. If your just using headphones for DJ'ing, then use the DJ headphones. You don't need as high quality, especially since your gonna have so much sound comeing from the monitors/speakers. The DJ headphones are just kind of a guideline for the actual sound comeing out. If your mixing trax before hand for a c.d. say- at home/studio, then use the studio headphones, otherwise stick with the DJ headphones. They also tend to be less expensive than the studio headphones.

Studio headphones have better fidelity and accuracy than DJ headphones. They don't need to be noise-cancelling (using lots of insulation), because of the quiet environment of a studio.

DJ headphones need to be more padded to cut down on loud outside noise (I assume you mean party DJ? -- not radio DJ -- which is a studio DJ). Even active noise-cancelling technology would be a good thing to have in a DJ set of headphones. All the DJ cares about is cueing up music, so he doesn't care if the headphones are "hi-fi" or not.
